Elana's Pantry
In my 20’s I studied ayurvedic cooking. When my son and I were diagnosed with celiac disease, this three-year study came in handy. Celiac disease is an inherited autoimmune disorder triggered by eating gluten. Out of necessity my cooking took on an entirely new dimension as we both went on a gluten-free, grain-free diet. While my cooking might not be complex, I appreciate that my food brings people together –those who eat regular food and those who can’t –to break bread in the warmth of my kitchen. I love to make food that is not only good for you, but actually tastes good. This has become a passion for me.

Gluten Free Easily (GFE)
Heading in a New Direction

Hi, there. Welcome to gfe! My name is Shirley Braden. I have set up this blog to share information with the gluten intolerance/celiac support group I lead and, hopefully, also with anyone else out there who might be interested. Perhaps you are already gluten free or have an interest in the effects of gluten. Do you have unresolved health problems? The list of symptoms related to gluten issues from gluten sensitivity to celiac disease is a lengthy one—full of surprises. No two people will have exactly the same set of symptoms and no two websites that cover these topics will list exactly the same symptoms. Most people with gluten issues have been diagnosed with other problems or told “that’s just your body; everybody’s body is different.” While everyone’s body IS different, there are lots of symptoms that are not normal for our bodies and if they are caused by gluten, removing gluten can often completely resolve the issues.

Gluten Free Goddess.

It took a good year plus to heal the damage that had been wrought by my evil nemesis, gluten (children will often heal faster- sometimes in six to nine months). And some ill effects still linger (FODMAPs and dairy foods are difficult to digest, and cause symptoms alarmingly akin to ingesting gluten). But each day gluten-free is a gift. And my body is grateful. Living gluten-free has also inspired me to get creative in the kitchen. I hope my recipes inspire you to make your day delicious.

The Nondairy Quess

I am a graduate of The School of Culinary Arts in Atlanta. I have worked in various fields in the culinary industry since 1995. I discovered I am lactose “challanged” (as my husband so lovingly calls it) in 2005. Cultures for Health
Shortly after becoming first-time parents to our son, we were introduced to idea of eating Real Food with an emphasis on traditionally prepared foods during a workshop on sustainable living. That introduction launched us on a journey that would become Cultures for Health.
We spent the month following the workshop cleaning out our pantry and sourcing local food and starter cultures for making yogurt, kefir, sourdough, kombucha, and more. Within a short period we had completely shifted how we ate and for the first time we could truly feel good about the food we were eating and what we were feeding our little boy. .Throughout this process we have focused on our goal: To create a website where people making a food change in their own lives could find all the products and information they need to be successful.

If you have a question about our products or cultured and fermented foods in general, you will likely find an answer to your question in our Knowledge Base: Expert Advice Articles, FAQs, How-to Videos, Recipes and more.

Cultured Pickle Shop
Cultured Pickle Shop

Dry farmed tomato and black peppercorn kombucha. Watermelon rind kimchi. Burdock root pickled in sake lees. Indian pickled limes. Vintage kraut. Beets pickled with Thai chili and basil. Within the American food lexicon, the pickle suffers from rigid and compartmentalized thinking. To many, the pickle is a sour cucumber, period. However, on any given day, one can visit the tasting area of The Cultured Pickle Shop and sample ten varieties of sauerkraut, four varieties of kimchi, fourteen different types of seasonal specialty pickles, eight different flavors of kombucha tea, two sake lees pickles, one rice bran pickle, and, of course, the ubiquitous Classic Dill. In the spirit of enlarging the collective culinary mind, Cultured challenges the narrow confines of America’s pickle prejudices. Global pickling traditions of the past interact dynamically with the Northern California foodshed in our Berkeley shop.

PHICKLE
Wild and Lazy Fermentation
Why Phickle? A few reasons. I live in Philly and I love Philly and it’s kind of rule here to start f sounds with a ph. Furthermore, lacto-fermented (as opposed to canned or vinegar) pickles are one of the easiest and most delicious things in the world to make. Most importantly, I am actually fickle. I am always on the lookout for a new project, and fermentation fits my wanderlust perfectly! There are an enormous number of fermented foods and fermented food categories to explore. This keeps my inner-Gemini very satisfied. The part of my brain that always needs to move on never seems to realize that I’m still under the same umbrella when I start fermenting something new!

Wild Fermentation
Wild Fermentation

Welcome to the Wild Fermentation Portal!
Fermentation makes foods more nutritious, as well as delicious. Microscopic organisms – our ancestors and allies – transform food and extend its usefulness. Fermentation is found throughout human cultures. Hundreds of medical and scientific studies confirm what folklore has always known: Fermented foods help people stay healthy.
Many of your favorite foods and drinks are probably fermented. For instance: Bread, Cheese, Wine, Beer, Mead, Cider, Chocolate, Coffee, Tea, Pickles, Sauerkraut, Kimchi, Salami, Miso, Tempeh, Soy Sauce, Vinegar, Yogurt, Kefir, Kombucha.
Wild fermentation is a way of incorporating the wild into your body, becoming one with the natural world. Wild foods, microbial cultures included, possess a great, unmediated life force, which can help us adapt to shifting conditions and lower our susceptibility to disease. These microorganisms are everywhere, and the techniques for fermenting with them are simple and flexible.

Low Carb, Paleo, and Primal Diets

Mark's Daily Apple
Primal Living in the Modern World

Really, my health philosophy is surprisingly simple. I follow a diet based on an understanding of evolutionary science. I think it’s more important to eat, move, and live according to how humans are designed and not according to society’s artificial developments of the last 100 years. Fortunately, this regimen is not only incredibly healthy, it’s quite simple.
.
In a nutshell:
– fresh, organic, unprocessed food – no junk!
– daily activity – whether it’s the gym or a walk along the beach, it all counts
– plenty of quality sleep
– plenty of water, no soda or sweetened drinks
– antioxidants galore – the key to limiting stress
– a good fish-oil supplement
– lots of essential fats, reckless amounts of vegetables, and clean protein
– time for fun – don’t take anything too seriously – ethical behavior – because what goes around comes around
– taking responsibility for yourself and your life – openness to new things and ideas

 Perfect Health Diet
We are scientists with a longstanding interest in diet and health. We began experimenting with low-carb Paleo diets in 2005, spent seven years refining them, have successfully healed our own “middle-age” and chronic health problems through diet, and have learned a great deal about the benefits – and pitfalls – of these diets that we would like to share.
.
We believe that:
Disease, premature aging, and impaired health have four primary causes: malnutrition, food toxicity, evolutionarily discordant lifestyles, and chronic infections by bacteria, viruses, fungi, and protozoa.
These causes go together. People who eat toxic, nutrient-poor diets are more likely to contract chronic infections and do not easily recover from them..
Yet the body has amazing powers of recovery. On a healthy diet, the immune system can tackle and defeat most infections, especially with the aid of antimicrobial drugs..
A diet like the Perfect Health Diet should be the first treatment option in most diseases and an adjunct to therapy in all..

the fast diet5:2 Intermittent Fasting

We all know how you are supposed to lose weight: eat low-fat foods, exercise more… and never, ever skip meals. This has been standard dietary advice for decades and though it may work for some people, levels of obesity continue to soar. So is there an alternative? We think there is. Intermittent fasting. Based on the work of leading scientists from around the world, this is an exciting new alternative to standard dieting.
.
Intermittent Fasting does not mean stopping eating entirely. It means reducing the amount you eat, but only for quite short periods of time.
.
In The Fast Diet book I outline my experiences of trying different forms of intermittent fasting, before settling on what I called a 5:2 regime. With 5:2 intermittent fasting you eat normally five days a week and diet two days a week, cutting your calorie intake for those two days to a ¼ of their normal level. This means that on, say, a Monday and a Thursday you will eat 500 calories if you are a woman, 600 if you are a man.
